Apple Stuffing Muffins!! Yum!

Thanksgiving preparation is in full swing and here's a wonderful recipe that you can add to the table.  We are going to make our bread cubes healthier by using Ezekial or sprouted grain bread.

Here ya go:

Makes 10-12 muffins

Ingredients:

6 cups of bread cubes (8 slices of Ezekial bread)

1 cup of diced apples

1/2 cup of diced onion

1 1/4 cup chicken broth

1/4 cup no sugar added apple juice

1/2 tsp. sage

1/2 tsp. thyme

pinch of cinnamon

drizzle of maple syrup

Directions:

First, we are going to make our bread cubes.  Cut the bread into cubes.  Arrange on a baking sheet and drizzle lightly with olive oil (or spray with olive oil spray).  Broil on low for about 1 minute per side.

Now, preheat your oven to 350 degrees.  Spray your muffin tins with olive oil spray

Saute your onion with olive oil and transfer this to a bowl.  Add in your apple and spices.  Mix everything else into the bowl except for the maple syrup.  Press the mixture gently into the cups and drizzle a little maple syrup over each one.  Bake for about 30 minutes.  Yum!!
