Healthy Peach Cobbler! Yum!!

OMG!! This was SOO easy and delish! I used Pyure sweetener for the peaches and a combination of Lakanto Golden Monkfruit and monkfruit extract for the dry ingredients…but…you can use whatever natural sweetener you have! Sweeten to. your taste! Yummy and healthy!

Ingredients

1/2 cup vegan unsalted butter (or coconut oil)

1 cup almond meal

1 cups sweetener (stevia or monkfruit), divided 

1 tablespoon baking powder 

pinch of salt 

1 cup nut milk (I used coconut milk)

4 cups fresh peach slices 

1 tablespoon lemon juice 

Ground cinnamon or nutmeg (optional)

How to Make It

Step 1

Melt butter/coconut oil in a 13- x 9-inch baking dish.

Step 2

Combine almond meal, 1/2 cup sweetener, baking powder, and salt; add nut milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).

Step 3

Bring remaining 1/2 cup sweetener, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if desired.

Step 4

Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.
